A tipping point is the moment when a number of small changes, occurring over a period of time, reaches a level where one further small change has a sudden and great effect on a system. Due to this, we are now able to produce Pinot Noir in England. The grapes were hand-harvested then partially destemmed and fermented in an open-top tank, with punch downs daily to extract colour and flavour. Aged in 228-litre French oak barrels for 12 months. Lightly filtered, therefore a sediment may develop in the bottle.
